Ingredients

  • 1 oroweat 100% Whole Wheat Sandwich Thins roll
  • 1 zucchini
  • 1 yellow squash
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • tablespoons roasted red pepper hummus
  • Special Tools: Spiralizer

Instructions

  1. Spiralize zucchini and yellow squash.
  2. In a medium pan over medium heat, heat olive oil.
  3. Add spiralized veggies to pan, season with salt and pepper and cook, stirring frequently, until just tender (approximately 6-8 minutes).
  4. Spread bottom half of Sandwich Thins rolls with hummus.
  5. Top with cooked zucchini and squash.
  6. Cap with Sandwich Thins lid and enjoy!
