Ingredients
- 2 slices of oroweat White bread, toasted
- ¼ cantaloupe, diced
- ¼ honeydew, diced
- 1 avocado
- 2 tablespoons Feta cheese
- 5 sprigs of mint
Instructions
- Chop cantaloupe and honeydew into small, bite-size pieces. Set aside.
- In a small mixing bowl, mash ½ an avocado.
- Toast 1 slice of bread until golden brown (about 4 minutes).
- Spread avocado mash on bread slice and top with honeydew and cantaloupe pieces.
- Sprinkle Feta cheese crumbles over fruit.
- Top with chopped mint and serve.
