Greek Yogurt Egg Salad Sandwich

Ingredients

  • 4 slices of Oroweat Potato bread
  • 1 cup Arugula
  • 1 tsp Dill, dried
  • 2 Roma tomatoes
  • 5 hard boiled eggs
  • 2 tbsp. Mayonnaise
  • 2/3 cup plain Greek yogurt

Directions

  1. In a large bowl, roughly mash hard boiled eggs with Greek yogurt, mayonnaise, dill, salt & pepper to taste.
  2. Serve on Oroweat bread with fresh cut tomatoes and arugula.
