Ingredients
- 2 slices of oroweat Organic 22 Grains & Seeds bread, lightly toasted
- 1 small sweet potato
- ¼ zucchini
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 4 tablespoons spicy red pepper hummus
- ½ avocado, sliced
- 4 grape tomatoes, sliced
- 1 tablespoon microgreens
- Special Tools:
- Spiralizer
Instructions
- Use spiralizer to cut sweet potato and zucchini into ribbons.
- Transfer to a medium bowl and toss with olive oil, salt and pepper.
- Transfer mixture to a small skillet and sauté over medium heat until tender.
- Spread each toast slice with 2 tablespoons of hummus.
- Layer on sautéed vegetables, avocado slices and tomatoes and garnish with microgreens.
