Grilled Vegetable Sandwich

  • 2 slices of Oroweat Healthful Nuts and Seeds Bread
  • 3 tbsp. Sabra Spreads™ Garlic Herb
  • 1 slice of grilled onion
  • 3 slices of zucchini
  • 1 oz. Feta cheese
  • ¼ cup of spinach
  • Squeeze of lemon juice


  1. Using a knife or a mandolin, slice a red onion into ½ inch slices.  Consider using a bamboo skewer soaked in water to hold the onion together for easier flipping.
  2. Slice off both ends of a large zucchini.  Cut the zucchini so that the pieces are about 4 inches each.  Use a knife or a mandolin to make vertical (long) slices of the zucchini.
  3. Using a stove-top grill pan or a bbq, cook the onions and zucchini on both sides until soft.
  4. To assemble your sandwich, spread 3 tbsp. of Sabra Spreads™ Garlic Herb on one slice of bread.  Pile on one slice of onion and 2-3 slices of zucchini and sprinkle with feta cheese and fresh lemon juice.  Top with ¼ cup of washed spinach and the second slice of bread.
