Thai Sweet Chili Chicken Sandwiches

Ingredients (2 servings )
1/4 cup nonfat plain Greek yogurt
1/4 cup Thai sweet chili sauce
1/2 teaspoon fresh orange or lime juice
3/4 cup chopped cooked chicken breast
1/4 cup chopped ripe mango
3 tablespoons grated carrots
3 tablespoons thinly sliced celery
2 1/2 tablespoons chopped red bell pepper
2 tablespoons chopped cashews
1-1/2 tablespoons thinly sliced green onion
1 tablespoon chopped Thai basil or cilantro
1/2 cup packed baby greens or baby spinach
6 thin slices seedless cucumber

Stir together yogurt, sweet chili sauce and juice in medium bowl. (Remove and reserve 2 tablespoons.) Stir in chicken, mango, carrots, celery, bell pepper, cashews, onion and basil (or cilantro); mixing to combine. Spread reserved yogurt mixture on cut sides of the Oroweat rolls. Layer the greens evenly on the bottom halves of the rolls. Top each with 1/2 the chicken mixture and cucumber slices. Add the top halves of the rolls.
