Spiralized Squash & Hummus Sandwich

Ingredients (1 Serving)
1 zucchini
1 yellow squash
1 tablespoon olive oil
Salt and pepper, to taste
1½ tablespoons roasted red pepper hummus

Special Tools: Spiralizer

1. Spiralize zucchini and yellow squash. In a medium pan over medium heat, heat olive oil. Add spiralized veggies to pan, season with salt and pepper and cook, stirring frequently, until just tender (approximately 6-8 minutes).

2. Spread bottom half of sandwich thins with hummus. Top with cooked zucchini and squash. Cap with sandwich thins lid and enjoy!
