Green Goddess Sandwich

Ingredients (2 servings)
½ avocado, mashed
1 teaspoon lemon juice
1 teaspoon kosher salt
2 leaves romaine lettuce
¼ cup fresh spinach
¼ cup cucumber, sliced
¼ cup green peppers, sliced
1 tablespoon cilantro, minced
  • Lightly toast Sandwich Thins rolls.
  • In a small bowl, combine avocado, lemon juice and salt. Spread avocado mash onto Sandwich Thins bottoms. Layer on lettuce, spinach, cucumber, peppers and cilantro. Top with toasted Sandwich Thins roll lids. Enjoy!
