Moroccan Rainbow Carrot Sandwich with Spicy Orange Dressing

In a medium bowl whisk together the oil, lemon juice, harissa, marmalade coriander, cumin, cinnamon, salt, & pepper. Add the carrots, arugula, mint, & raisins.
Toss mixture & let sit for 5 minutes.
Gently stir in the pistachios & feta.
Spread hummus over each slice of toast, & top with the carrot mixture.
