Quick and Egg-cellent Dinner

What do toast, avocado and eggs have in common? When grouped together, they make for a versatile meal option that can be served at breakfast, lunch and even dinner.

If you’ve implemented a new routine in the New Year, and find yourself short on time for dinner, cancel that delivery and whip up this Poached Egg and Avocado Open-Face Sandwich.

This recipe uses just three main ingredients- an egg, some avocado and our Oroweat Healthfull® Flax & Sunflower bread, which is 80 calories a slice and doesn’t contain any artificial colors, flavors or preservatives.

For those looking to stay on track with making better eating choices in the New Year, put away those chips and pairs this with some fresh fruit or a mixed green salad.

Poached Egg and Avocado Open-Faced Sandwich
• 1 slice of Oroweat Healthfull® Flax and Sunflower bread, toasted
• 1/4 avocado, sliced
• 1 egg, poached
• Salt and pepper to taste

Serving Size: 1 serving

Slice ¼ of an avocado and place on top of toast. Poach one egg, allow egg to dry. Once the egg has dried, place on top of sliced avocado and salt and pepper to taste.
