Ingredients (2 Sandwiches)
4 slices Oroweat® Healthfull® Nuts and Seeds bread
15.5 oz. can chickpeas, drained and rinsed
1/4 celery, chopped
1/4 c. dried cranberries
1/4 c. smoked almonds, chopped
2 tbsp. eggless mayonnaise
1 tsp. maple syrup
1 tbsp. balsamic vinegar
1 tsp. Dijon mustard
Salt and pepper to taste
In a medium bowl, slightly mash chickpeas with a potato masher or back of a spoon. Mix in the remaining ingredients. Divide the mixture between two slices of bread. Cover with remaining two slices of bread and serve.
